Washing tea leaves
For some pressed tea or aged tea, a small amount of hot water can be poured in first and then the tea leaves can be rinsed quickly to remove impurities and awaken the tea. However, not all kinds of tea need to be rinsed. For instance, delicate green tea can be left un-rinsed.

Choose the appropriate water temperature according to the characteristics of different types of tea. Generally, green tea is brewed with water at around 80℃, black tea with water at 90 - 95℃, and oolong tea with boiling water.
• Adopt different infusion methods. For instance, when brewing green tea, the "top infusion method" (pour water first and then add tea) or "middle infusion method" (add tea first and then pour in a small amount of water to moisten the tea leaves, followed by adding water to the full cup) can be used; for oolong tea, the "high infusion method" is more commonly adopted to make the tea leaves tumble in the water and fully release their aroma.
Serve the soup.
• Master the brewing time. For green tea, it is generally brewed for 1 to 3 minutes; for black tea, 3 to 5 minutes; for oolong tea, depending on the variety and personal taste, it is usually brewed for 1 to 5 minutes. If the brewing time is too long, the tea soup will become bitter.
After brewing, pour the tea infusion into the fair-ground cup to make the concentration of the tea infusion uniform.
Tea tasting and tea appreciation
Pour the tea soup in the fair-ground cup evenly into each of the tea cups.
First, smell the aroma of the tea; then, observe the color of the tea soup; finally, taste the flavor of the tea infusion and experience the charm of the tea leaves.
